Is there any way to beat the insane admissions process and high cost of sending your child to a top US University?

Indian restaurants in Bangkok usually fall into one of several categories: very high-end places with traditional northern Indian cuisine, mid-level places with the same type of menu and very low-end southern Indian and vegetarian places. However, Red Indian restaurant on Sukhumvit Soi 55 sort of breaks the mold. It is not really expensive and offers a surprising variety of Indian dishes that come primarily from the north but also represent many different areas of this large and incredibly diverse culinary country.

I had never visited Red until recently (May, 2009) even though it had been open for about two years and was very impressed with the unique character of the food. There were a number of recognizable dishes on their menu but also many that I was not familiar with at all and these happened to be the most memorable. Number one on my list is, perhaps surprisingly – since I’m not really a vegetarian, a dish known as tawa subzi bahar. It’s basically an assortment of fried chunks of vegetable with some sort of spicy coating that is made up of a number of ingredients. It was delicious and I couldn’t stop eating it even though I had many other dishes to try in one sitting.

Actually, everything I tried was very good, from the fish moilu to the jinga tiranga – tandoor-cooked prawns with a tasty marinade – to the peas pulao and the special flambéed raan, a lamb dish, which is done tableside. I also tried a mushroom-based dish and a tikka as well as several others and in each case there was a distinctive, and for me, different taste to each of these dishes.
This is definitely a place to put on your culinary calendar whether you’ve been a big fan of Indian food in the past before or not. No matter what country these dishes come from they’re just plain good and your taste buds will thank you afterwards. Red reminds you that it’s a good idea to break out and try something different once in a while.

Mexican restaurants in Bangkok have always been few and far between and good Mexican restaurants have been pretty much non-existent. There have been, and are still, a couple that are OK and there are also a couple of American-themed restaurants that offer some Mexican items that are also OK but there hasn’t been a place in Bangkok that really understood what Mexican food is all about until the last six months or so.
That’s when Mamacita’s, a tiny place on Sukhumvit Soi 15, opened for business. Khun Bee, the owner and chef, lived in Mexico for six years while she was married to a Mexican national and immersed herself in the cuisine of the country, learning the intricacies of using the ingredients and spices that go into this interesting and vital cuisine.
On a very recent visit I sampled a number of her dishes and realized that she really does understand what Mexican food is all about. Since I lived in Los Angeles for six years I picked up a healthy appreciation of Mexican food and learned what’s real and what isn’t. I can still remember the taste of the margaritas at Gardens Of Taxco in West Hollywood, a taste I’ve never seen duplicated anywhere.
Anyway, Bee, from Singapore herself but a Bangkok resident for 21 years now, knows what she is doing and does a good job of recreating the tastes of Mexico. She cannot put all of the dishes she would like to on the menu because of problems with the supply of key ingredients but she can make these dishes for special events or parties. What she does make is very good, though, and as true to the cuisine as you’ll find in Bangkok.

I liked all of the dishes I tried as well as her sauces: albondigas (Mexican meatballs), tortillas soup, tacos, flautas, guacamole and cliaquiles verdes (tortillas immersed in a green chile sauce with sour cream and cheese). Her salsa ranchera and salsa verda sauces were as close to the real thing as she can get also, even though she has substituted some local ingredients. After talking to her, I don’t think there is anything on the menu that isn’t as authentic as she can make it. And if she can’t do it right then she doesn’t do it at all.

So the next time you have a taste for Mexican food, Mamacita’s is the best place for authenticity. It’s not real fancy and it’s not real big (call ahead if you have a big group, 02-253-2795) but it’s real and that alone is enough.

Wine dinners at the Four Seasons’ Hotel in Bangkok are not held on a frequent basis but when they are, they are done right. The Biscotti Italian restaurant in the hotel is the setting for a wine dinner on May 15 that will be featuring the wines of Michele Chiarlo and the food of the restaurant’s chef, Danilo Aiassa. The winery has recently signed a distribution agreement with IWS, a local wine importing company to represent them in Thailand and this dinner is a way for the company to introduce the winery to Bangkok wine lovers.

They could hardly have picked a better location either, as Biscotti is one of the most popular Italian restaurants in the city and Chef Danilo is a dedicated and accomplished chef who has a great sensibility for wines, perhaps especially so for wines from his native Italy. At a recent media preview of the dinner we sampled the food that will be on the menu along with some of the wines that will be served. A couple of the wines were still I transit from Italy but if the taste as good as the ones that were already there then the pairings will certainly be successful.

Chef Danilo has a great creative gift and that’s the main reason I like eating at Biscotti. And the dishes he will be serving are prime examples of that creativity. Starting with the appetizer of red bell pepper mousse along with yellow bell pepper sorbet and Testun cheese foam, this menu highlights a number of the chef’s talents. We were next treated to a terrine made with lobster, salmon and trout and wrapped in sliver beet with salmon roe and vegetables accompanying it.

He followed these two delicious starters with a great risotto that included white asparagus and a deep-fried frog’s leg along with some green peas. I’m not a great frog’s leg fan but this one was quite tasty and the risotto was cooked perfectly. Next came some ravioli stuffed with porcini mushrooms, ricotta cheese and summer black truffle. The richness of these three ingredients blended together inside the ravioli created incredible taste sensations in the mouth. The last dish before dessert was a braised beef cheek on a bed of polenta with pecorino cheese and accompanied by a silky smooth cauliflower brule. What a combination of flavors this meal presented and the wines seemed to have been made especially for these dishes.
